Oreo Fixins

I have the tiniest obsession with Oreos. They are inevitably the way to my heart. I know it may shock you, but I don't particularly enjoy the Double Stuffed Oreos or any of the seasonal flavors. For me, there is no other way to go than classic.

On that note, I needed to whip together something sweet for my work family. It goes without saying that my department is the bomb dot com. They have embraced this blue blooded Yankee with open arms and are helping me to grow into a stellar employee. 

So I thought I would whip up some Oreo Truffles, made with love, of course. If you haven't had the pleasure of trying these lovely little treats then you are fixin' for a real surprise (read that with a Southern accent it will make them taste better). They really are perfect for Holiday parties, gifts for your awesome boss, lovely neighbor, friendly mail man, or chocolate loving father.

You need three ingredients…
1 pkg of cream cheese
1 pkg of Oreos
2 or 3 boxes of Bakers chocolate

Ground up your Oreos in a food processor.

Add in your softened cream cheese and blend. Good thing about living alone is that I don't have to share the chocolatey beaters. 

Pop the batter into the freezer for 10 min so it's not so sticky when you roll them into little balls. I used a cookie scooper to get even sizes. Then just roll into a ball with your hands and line up the little suckers on wax/parchment paper. Once I have them all rolled out, I put them back in the freezer for another 10 min before dipping in the chocolate.


Melt the chocolate according to the package. Drop the ball in the melted chocolate. The trick to getting it evenly coated is to spoon the chocolate all over the Oreo ball. Then, using a fork lift it out of the chocolate letting excess drip off. I then strategically balanced the chocolatey goodness between two forks where I dropped it on the wax paper to dry. It takes a little trial and error. 




Just for kicks I drizzled some melted red chocolate over the top for added effect. You can do sprinkles or cookie crumbs, whatever your heart desires.

Ice Cold

As luck would have it, an ice storm with a whole lot of hype and not a lot of umph swept through Memphis on Friday. They booted us right out of the office giving us a nice little jump on the weekend. I think this was Mother Nature's birthday present to me.

On top of a short work day the race I was supposed to run on Saturday morning was cancelled and thank heavens. It was down right frigid outside, and I can't say I was looking forward to my 5am wake up call. Needless to say, I was pleased as punch to have my entire weekend freed up and slotted for a spot of Christmas decorating and lots of Netflix. You'd be happy to know I have now watched Love Actually 3 times this Christmas season. Classic.

The weather man may have cried wolf, but I am deeply grateful because I am very well rested, a bit merrier, and a lot brighter.













Upon popular request I have been asked to publish my bucket list for my 25th year. Don't forget to pop back in as I fine tune my adventures for 2014…

It's Beginning to Look a lot Like Christmas

As tradition has it, the day after Thanksgiving my sister and I take on the great task of decorating my parent's  house for the Holidays. Every year it goes a little something like this…

  • We blast Pandora Christmas tunes with the likes of Ella, Bing, Frank, Dean and Rosemary
  • Ambitiously craft some new Christmas decor to add to Ma's collection. This typically ends with a "Who's idea was this?"
  • Recruit Pops, the electrician, for just about everything that requires illumination. He was blessed with far more patience than the rest of us.
  • Finally, a "team" Christmas tree effort commences. EB and Ma do a bulk of the work. Dad helps in vertically challenging moments. Jared pretends to help in general. And I do a little here and there trying not to overexert myself.
Here is our little craft project. Glass ornaments filled with glitter and strung to the chandelier. It will give your dining room table that mystical, magical Harry Potter look.

What you'll need:
Clear glass ornaments - we used multiple sizes
Glitter
Funnel - homemade paper ones worked just dandy
Fishing wire/thin string
Coffee filters to contain the glittery mess





















Now onto the family affair of tree decorating.

This is where sibling rivalry really kicks in. Who can get all their ornaments front and center first. Let the games begin.

So excited to be back home again with the family in just a matter of weeks. In the mean time I have lot's of shopping to do.
